Do you eat light at lunch and then find you’re fridge picking all afternoon?

So many of my clients do, it’s easily done!

It’s good to stick to eating at meal times and this is possible if you get the ratios right . . .

This fab little salad will do just that

🧩 protein to balance your blood sugar and support your muscle and bones

🧩 fibre to support your gut

🧩colourful salad ingredients to slow down the ageing process…woo hoo

🧩 good fats to support your hormone balance…happy happy

RECIPE

1 small jar of chickpeas
green pea shoots ( or whatever greens you have )
a grated carrot
1 red pepper
1 small cucumber
handful of fresh basil

Dress with the olive oil (4 dessertspoons) apple cider vinegar (2 dessertspoons) mustard (1 tsp) and honey (1 tsp)…place in jar wit lid and shake to combine…use approx half and keep the other half for another sitting

Then take 1 skinless chicken thigh per person, slice it into small strips, set aside

Fry 2 sliced garlic cloves in a little oil, add the chicken strips and 1/2 tsp of harissa spices and cook until the chicken is tender

Place on top of salad and enjoy really tasty and took me all of 15 minutes

After two days on the road – getting back from the

After two days on the road - getting back from the outer Hebrides, I was seriously craving some fresh food

This is just a bowl of salad ingredients that I threw together with an egg, new potatoes lots of fresh mint and basil plus all the other ingredients you can see

The key to making all this delicious is to add a really good dressing

And lots of fresh herbs which increase your nutrient intake even more !

Fav dressing

1 tsp Manuka or normal honey
1 tsp English mustard
2 tbsp apple cider vinegar
4 tbsp of olive oil

Place in a jar / lid on and shake

I used approx half of this

I ❤️ eating but am trying to avoid the midlife middle / which isn’t always easy it just seems to go on …. But with a big bowl like this you’re munching for ages and feel really sated after
