Fabulous lunch recipe - do try this it’s absolutely delicious

make it often and it soon becomes v low effort

I’ve been making this loads lately, it goes down well with Bbq food or I just have it for lunch over a few days

It’s adapted from an old Delia Smith recipe…here’s the rather wordy recipe but it’s basically just prepping some quinoa or cous cous, then roasting a tray of vegetables, adding some feta and a spicy dressing

ROASTED VEGETABLES WITH QUINOA & HARISSA DRESSING

Serves 4-6

450g cherry tomatoes
1 small aubergine
2 medium courgettes
1 red pepper
1 yellow pepper
1 large red onion, cut into thick chunks
4 cloves of garlic crushed
2 tbsp of olive oil
Handful of torn basil leaves

Chop these, place in a roasting tray, pour over oil and crushed garlic, basil and combine

Place in oven at 180c for 35/40 minutes

For the quinoa base

250g quinoa – follow packet instructions to cook

110g of firm goat’s cheese

For the dressing – combine in jug and whisk with fork

110 ml extras virgin olive oil
1 tsp cayenne pepper
3 tsp of ground cumin
2 tbsp tomato purée
Juice of two limes

To serve / bag of salad leaves
Place the cooked quinoa in large salad bowl, place cubed cheese over the top followed by the roasted vegetables
…..add salad leaves (rocket, coriander whatever salad you have) on top and pour over dressing
