This is a staple for me because it’s so quick and easy to prepare and you can keep it interesting by adding different extras. It’s also easy on the stomach – soaking oats and flaxseed makes them easier to digest. Oats contain resistant starch keeping you fuller for longer and the flaxseed is a good source of omega 3 fatty acids, fibre, as well as lots of other vitamins and minerals. Try making in a jar with a lid if you’re on the go, or just in a simple bowl if eating at home. If I have friends staying, I like to go all out and decorate the oats as in the image.
Ingredients
half a cup of porridge oats
1 dessertspoon flaxseed
1 cup of milk of your choice…almond/coconut milk/dairy
1 grated apple
sprinkling of cinnamon & powdered ginger to taste
Half a cup of yoghurt or dairy free alternative, Coyo coconut yoghurt
handful of berries or fruit of your choice
Optional Extras
Dessertspoon of nuts, toasted almonds / walnut/ pecans and seeds
Sprinkling of desiccated coconut

Method
Place oats and flaxseed in a bowl, grate apple into bowl, add milk and yoghurt and spices. Mix well.
Leave oats to soak for at least 20 minutes or overnight.
Next morning gently heat or eat cold, add more milk if consistency to thick. Top with berries and nuts of choice.
